Leftover granola bar
The other day I had made too much quinoa and since I knew we did not get to eat them, I had to find something else I could use them. It ended up as granola bars or crispbread if you like. They actually got really good and work super like a quick snack on the go.
Recipe:
- 2 dl prepared quinoa
- 1-2 tbsp. psyllium
- 1 dl pumpkin seeds
- 1 dl sunflower seeds
- 0.5 dl sesame
- 1 dl pecans (chopped)
- 2 tbsp. cashew butter
- 1 dl dried apricots (chopped)
- 3 dl water
- 1 tsp. salt
Start by mixing the dry ingredients together. Then add the quinoa and apricots, and finally the water. Stirred it together and spread into a baking pan (about 20X30 cm) in 1-1.5 cm thickness. I find it is easiest to use a spatula for this.
Bake at 150 degrees for approx. 1-1.5 hours keep an eye on it. When cooled, cut into appropriate pieces.
