Potatosoup With extra protein
Soup is a great way to get a lot of vegetables into your diet. In my house, we always make a large pot of soup so we have it for several days. This soup is also freezer friendly, so you can save it for another day.
  • 200 g of dried white beans
  • 1.5 kg potatoes
  • 3-4  leeks
  • 3 onions
  • 1 stalk of celery
  • 1 parsnip
  • 1 parsley root
  • 2 l water
Pre-cook the beans according to the instructions on the package or use those from a can. Chop all the vegetables into coarse pieces. Fry the leeks and onions in oil. Add the water, the rest of the vegetables and the beans. When the vegetables are tender, puree the soup. Season the soup as you like. I use salt, pepper and thyme.

So why do I add beans to our soup? Often soup is used as a starter, but when its not, you should think how you can add protein to the dish. I find beans to be a great source to protein, and they also make the soup creamier when pureed. Try it out!
