Pumpkin soup
This is one of my absolutely favourite soups, pumpkin soup. I remember when my husband and i just moved in together and still studying we bought the frozen variant. It was ok, but since the first time we made it our self we haven’t gone back.
You need:
- 1 butternut pumpkin
- 2 onions
- 2 parsnip
- 1 l stock
- 1 can of coconut milk
- 1 lime
- 1 can of white beans
This is how you do:
Cut and rinse all the vegetables except for the lime. Start by fry the onions in a pot until they start to colour. Then add the parsnip and stir for about a minute until you add the pumpkin, beans and the stock. Let it simmer on low heat. When the pumpkin and parsnip is tender, you puree it al. Then you add the coconut milk and rehash the soup. Just before serving you squeeze the lime in.

What to do with the pumpkin seeds?
When you rinse the pumpkin don’t throw away the pumpkin seeds, they are so delicious. You can use them as topping on your soup, but also as snacks. Here you find two recipes different recipes on how to use the pumpkin seeds, one salty and one sweet version.
