Redcabbage salad


This red cabbage salad is one of my favorites, it’s both sweet, crunchy and fresh at the same time:

  • A small red cabbage
  • A handful dried apricot
  • A handful walnuts
  • Elderflower juice

Tear the red cabbage fine or use a mini chopper and pour the elderflower juice over. I took a small glass where the ratio was about 1:1 juice and water. If you have time, let the salad soak in the juice, I personally think it will get better by doing that. Chop the walnuts and the dried apricots and sprinkle them over the salad before serving.

Why Nuts?

I find nuts to be a really great topping for salads; it can add flavor and crunchiness. At the same time, nuts are filled with fibers, vitamins and minerals, healthy fats and proteins. Nevertheless, as with everything else, don’t overdo it, there are also very high on calories, so if you trying to lose weight or maintain a weight loss you should not eat more than a small handful a day.
