Risotto without dairy
One thing we a lot of at our house, is risotto. It’s so easy to make, it’s allergy friendly and both adults and children loves it. I have to admit though, that the amount of vegetables varies whether it’s me or my husband who is making it.
Recipe for 4 persons:
- 200 g mushrooms
- 3 spring onions
- white wine
- Broth/stock (Choose one that that doesn’t include anything you are allergic to)
- salt and pepper
It’s really easy to add more vegetables or different flavours. For example, you can add carrots, zucchini, ginger, bell peppers, tomatoes, different mushrooms, and the list can go on.
Risotto leftovers
If you like me hate to waste food, here is a tip; you can fry the leftover risotto on the pan, I always add extra vegetables, eg. carrots, peas etc.
